This is one of my absolute favorites to have for breakfast. Seriously, it’s delicious, quick, easy, chocolatey, kid friendly and did I mention delicious? It needed to be said twice.
Decadent Chocolate Oatmeal
½ cup quick or rolled oats
½ cup milk
½ cup water
1 tbsp + ½ tsp cocoa powder
2 tsp brown sugar, maple syrup or equivalent amount of preferred sweetener
¼ tsp vanilla extract
Dash cinnamon
Pinch salt
Directions:
Heat milk and water in a pot. Add cocoa powder, vanilla extract, cinnamon, salt, and oats, stirring to combine. Cook until oats have absorbed liquid, about 5 minutes for quick oats. Milk can be added to get the consistency you prefer.
So, let’s talk toppings! Can you leave it plain? Absolutely, my son prefers it that way! To dress it up and make it fun, I will add sprinkles and serve it with a side of fruit. I, however, am high maintenance and like to dress it up.
Something I add to oatmeal each time I have it is ground flaxseed. Flaxseed adds extra fiber, which comes in handy with Hypothyroidism, and it’s a source of Omega 3s.
To add a little extra protein and because I’m low key obsessed with it, I top it with about a tbsp of peanut butter. Any nuts or nut/seed butter would do the trick.
Lastly, because I aim to have at least one fruit or vegetable serving with every meal, I like to top it with fruit. My favorites are strawberries, raspberries or sliced banana.
