Pressure Cooker Mashed Potatoes
6 Russet potatoes, peeled (I leave some of the skin on) and cut into 1/8ths
3 cloves of garlic, chopped
1 cup water
1 tsp salt (or to taste)
3/4 cups milk
Pepper to taste
1/2 tbsp butter
1) Add 1 cup of water to the pressure cooker pot. If you have a steamer basket, add potatoes and garlic to basket or place directly in water. Close pressure cooker lid, and set to seal. Cook on high-pressure for 7 mins.
2) Natural release for 5 mins and then quick release. Remove steamer basket carefully, or strain potatoes. Add to mixing bowl with milk and seasoning of choice and prepare with mixer or a masher.
To make our favorite Ranch Mashed Potatoes try:
2 tbsp Ranch seasoning. Until I get a tried and true recipe for home made seasoning, we use the store bought stuff.
1 tsp salt
A few grinds of pepper
1/2 tbsp butter
Using the pressure cooker makes the process of making mashed potatoes a little easier. Add in ranch seasoning, which here ranch is as common of a condiment as ketchup, makes a side even more kid friendly. It pairs perfectly with my Quick and Easy Stovetop Meatloaf.
