Hassle free baked eggs

There’s nothing like a good kitchen cheat am I right? Well, here’s my cheat for you this week…eggs baked in the oven. Cue the fireworks, mind blown right? Ok, probably not, but trust me, this is a handy trick to have in your arsenal. 

Eggs cooked in this method are versatile in a multitude of ways. First, you can add in any vegetables, breakfast meats or cheese your normally like with your eggs (personally I prefer the texture without cheese).  Plus, if your family is anything like mine, there’s different taste and preferences. For example, my husband and I enjoy vegetables mixed in ours, but my daughter prefers her plain, even if it’s something we know she likes such as sausage or bacon. In one casserole dish, I can fix the eggs both ways, one half being plain and the other full of colorful vegetables.

The versatility doesn’t end there however. You can serve as is or turn them into breakfast sandwiches.  This cheat, is perfect for meal prep and or freezer meals, which gives you an opportunity to take advantage of sales my fellow bargain hunters. So, my kitchen hack this week might not be earth shattering, but it can definitely be a useful one.

Ingredients:

10-12 eggs

1/4 cup milk

1/2 tsp salt

pepper

Diretions:

  1. Preheat oven to 350 degrees. Spray rectangular baking dish.
  2. In separate bowl, whisk eggs, milk, salt and pepper together. Pour into baking dish. Bake until eggs are done, about 20 mins. The center will be slightly jiggly, but firm. If freezing, cut into desired portions and either flash freeze so they don’t stick together or assemble your breakfast sandwich, wrap in freezer paper.
